Cupcakes. Yellow box mix, but whoa we have no icing! One google later and I have made peanut butter butter cream.

I made ricotta gnocchi and kale sauce last night. (Boil lacinato kale, fry some garlic, purée with a bit of water and toasted sunflower seed oil and salt and pepper.) Great way to get a whole big bag of kale into two people in one sitting while still feeling like you’re just eating comfort food. I fried some of the gnocchi as a garnish and I really should have done that for the whole bag, they’re so much better that way than boiled.

Thanks! I've had a pasta roller for years now and every time I use it I wonder why I don't use it more often, then it sits around unused for a few more years. I'm trying to change that. Fresh pasta isn't hard to make and it's a lot of fun.

ZOMG fluffy, that pasta looks fantastic! I was pretty excited initially about Cosmic Crisps, but sadly they're a bit too tart for my taste.

Made another batch of roasted corn salad.

This time I made a habanero vinaigrette (red wine vinegar, olive oil, one finely-minced habanero, a minced shallot, and a teeny skosh of dijon mustard), and the salad itself is made from roasted corn, black beans, crumbled cotija, diced jicama, and some chopped peppadews. For spices I just used some dried parsley and oregano since that's all I have left and all the bulk spice bins in Seattle are unavailable due to COVID-19 concerns, and I refuse to pay $5 for a half ounce of dried cilantro or whatever. Oh and then some lime juice as well.

Our dishwasher died at the start of lockdown, and as such our landlord hasn’t been able to get anyone out to fix or replace it. We managed to make it limp through for a while by wedging a piece of paper into the power button, but it’s finally died for good. So yesterday I had to make something for dinner that used as few cooking implements as possible. Turned on some Prince and made Dirty Rice.

I would think that it would work pretty well with sautéed mushrooms and minced shallots, maybe some peas and carrots? Add a bit of miso or vegetable stock to amp up the foundations?

It is super delicious, and also just exceedingly simple, so is a good choice when you don’t have a lot of energy or space to cook.

Made up a casserole to use old stuff in the fridge. Turned out well.

Brussels Sprouts and Butternut Squash chunks, roasted with garlic, salt, and balsamic with some olive oil.
Laid that mixture on top of some cooked rice.
Spread a can of Campbell’s cream of cauliflower soup on top that had been in the pantry forever.
Cooked up a pound of ground turkey and dropped a couple eggs in there.
Salted stuff as I went.
Drownededed it all in cheddar and parm.
Cooked it for a while at 350 until the top got brown and stuff.

Gooooood.
