Oh man, I love me some Priest. There were a couple of years there where I would claim them as my favorite band.
There is a trinity of their greatest songs : Victim of Changes, Sinner, and the Ripper. They usually play those 3 together about 2/3 of the way through a set. It is the classic Priest. That Joan Baez cover of Diamonds and Rust is amazing. There's something pure metal about Hell Bent for Leather. Even my 7 year old son loves Breakin the Law.
Victim of Changes and Sinner are more epic, but I have to choose the Ripper. It's rockin, it's concise, you have dynamics and that Halford scream in the 2nd line "..you're in for a shock aghhhhhhh"
