In my house, we'd still call that a quesadilla. Perhaps add a descriptor to it to describe what you've stuffed it with.
How about calling it, "Smoked Stuffed Corn Quesadilla with Spicy Special Dip"?

...well now that I think about it, my way might get pronounced rivuh, like someone from Boston saying river.
