I am still debating on whether to completely re-write the song or to attempt to cover it in the traditional sense. Two of my options really require a full band, so I think those are out. Two other ones could probably be converted to guytar, but I am still thinking of just using the lyrics and writing a whole new melody because that will work better solo. Chances are, I'll be going with the re-write option.

I'd only do that if the original didn't have much in the way of chords or melody in the first place. If the original was a rap over a beat, without even basslines or samples of music with chords in it, then I'd write my own music. The link to your song in the VU fight now appears to be broken, so I can't go back and listen to it for comparison, but ISTR that even though you changed it. you kept enough of the chords that it was within the bounds of what I could consider "arrangement".
