Wireless Channels and Bandwidth

Where I live there are generally 6 - 12 wireless networks within range. I've seen charts showing how channels 1, 6 and 11 don't overlap and suggestions that you should only use these to prevent choking on bandwidth issues in populated areas. But what if there are 4 people on channel 6. Isn't that just as bad as any overlap from other channels?
I guess it comes down to this...other than simply switching channels and seeing which happens to serve you better, how can you proactively optimize your wireless network via channel assignments? (other options aside)
