meter calibration for recording levels

For my guitar preamp I'm using the high-impedance mic inputs on a Sony 2000F. I picked it up at a Sally Ann for ten bucks. (For my mics I use a Nexxtech disco-mixer object with low-impedance 1/4-inch mic inputs; it has no high-impedance inputs suitable for guitar voltages. My studio is still pretty low-budget.)

The 2000F has shared level meters; you can switch them to monitor the mic input, or the master output (volume). For the master output monitoring, the switch has three selections: 0dB, -10dB, and -20dB. I have no idea which one to use or why. Can anyone advise?

FWIW, the output is switchable from .3V to 1V on the back panel.
