
I made St Louis ribs yesterday.
I season them up, use some smoked paprika, then put apple sauce on both sides and slathered it on.

Wrap it up in foil on a cookie sheet and put them in the oven at 325 for about an hour and a half. Pretty much when the large end meat is just starting to pull away from the bone ends and it's tender, but not pull apart tender. Otherwise they'll fall apart while grilling and I don't like over cooked pork ribs.

When I take them out of the oven, I let them rest for a good 30 minutes still wrapped. I get my smoker can going on my grill. I used apple wood this time. Sticking with the apple theme. Why not? Put them on a smokey grill on low heat with the lid closed. After I turn them, I start putting BBQ sauce on. I used Tony Roma's Carolina Honeys this time.
They came out great! As usual. Moist, tender and finger suckin' good.
