I just played a 5-song demo for a few minutes. It was fun, but it definitely feels different. The notes, star power meter, and multiplier meter all seem harder to read. I really like the counter that shows you your note streak in real time once you pass 40 notes and the notices when you hit 50, 100, etc. The hammer-ons and pull-offs definitely feel easier to hit, like they increased the fudge factor there. I'm not sure what was happening, but star power engaged a few times when I didn't even move the guitar, so they may have also made the gyro stuff more sensitive somehow. The demo songs aren't that exciting (Even Flow, The Metal, Rock You Like A Hurricane, and a Pat Bennatar song I can't remember), but it's fun to have new songs. (I would have completely stopped playing GH II except that I'm a masochist and I'm still trying to beat "Jordan" on Expert even though I fail at 59% every f'ing time.)
Graphics wise, the graphics are good but I'm not sure I like the new look of the characters. The male lead singer looks like a freakish monster. The female guitarist had huge jiggling boobs. The drummer/bass player/and spiky haired punk rocker guitarist all looked OK, though.
I wonder what the "Jordan" will be for GH III? The Slayer song perhaps?

Re: Guitar Hero III
According to IGN, it's the Dragonforce song. ("We still don't think that tune is doable on expert. And we tried.")Lunkhead wrote: I wonder what the "Jordan" will be for GH III? The Slayer song perhaps?
"I'd like to see 1984 redubbed with this in the soundtrack."- Furrypedro.

I picked this up today. It's too early for an in-depth review, but I like it well enough so far. I'm intrigued by the inclusion of a Co-Op career mode.
Will update in a few days, once I take a break from playing.
UPDATE: Last night was the first night I got to really sit down and make some progress with the game. So far, it's a lot of fun. The notes are a little harder to read; maybe I'm just not used to them yet. But I feel like all the graphics have been made a little more slick, but a little tougher to read while playing. For someone watching someone playing the game, it's all an improvement for sure.
I didn't get one of the new fancy-schmancy guitar controllers. The game does seem a bit more forgiving in regards to timing. And the hammer-ons and pull-offs are easier to hit.
I won't go into much detail about songs and career progression, but it's been a nice mix of music, with a couple surprises in there.

We got it at work Monday and I started playing it yesterday. It's awesome, though the difficulty curve is a bit odd. It's pretty easy for a long time, then the last set of songs has some that seem impossible ("One", "Raining Blood", and "The Number of the Beast"). Co-op career is cool, battle mode is cool. I beat Slash in battle mode during the expert solo career, but I haven't tried Tom Morello yet. The wireless controller is great. I was playing the bass line for "Black Sunshine" and was showing off (like a total nerd) by turning in circles while doing it, since it was the same thing over and over. We just unlocked the Dragonforce song, so I'm probably going to give that a try soon, though I'm sure it will be impossible.
