Hey everyone,

Today was my kids (plural) birthday (singular yet plural kinda) party. It was a carnival theme with popcorn makers, a bounce house, fake tattoos, coin toss, basketball toss, fake fishing and all sorts of other carnival goodies. It was a complete success and I have to commend my wife for pulling off such an awesome party for the kinderlings. Now it's late at night and the 5 remaining adults at the house are all super exhausted. Correction- 2 are asleep, 1 is playing Spore, 1 is playing Pokemon and 1 (Me) is lamenting the fact that the upstairs neighbors have get together where they make music. I don't get upset about the music. They aren't too loud. They're pretty considerate neighbors for a gaggle of college girls. I'm lamenting the fact that I can't pull that off. I don't have a lot of musical friends in the area. Somedays I wish I could just convince a group of non-musical friends to learn musical instruments and become a ragtag band of musical hooligans.

Food of the Day: South of the border night. Umm Num Num. I'm making tacos Al Pastor. I started marinating a large pork butt yesterday with a traditional al pastor adobo. It's on a spit in my bbq as we speak. Every pepper except the chipotle comes from my garden. I do have jalapeno peppers in my garden and the adobo does have fresh jalapeno, but it's too easy to just buy chipotle peppers because they're already dried and smoked.
I always reserve about 2 cups of the adobo, then simmer it down, blend it to a puree, toss in fresh chopped cilantro and a squeeze of lime for a sauce to drizzle on the food later.

THEN. I made a killer cha cha salsa. It's made with zucchini, (yes zucchini) pineapple, carrot, onion, jalapeno pepper, a couple serrano peppers, cilantro, garlic, cumin, a little drizzle of olive oil, a little splash of rice vinegar, a pinch of sugar, salt and pepper to taste and a sprinkle of love. Let it sit a couple hours, perfect.

I'll be serving it with Spanish rice, refried beans, warm corn and flour tortillas, shredded cheddar cheese and sour cream. That's it.

My wife doesn't like it taco style, so she has it lame style. Scoop of rice, topped with shredded pork, a huge scoop of the cha cha salsa, a dollop of daisy, and bam! Beans on the side topped with cheese and a dollop of daisy. She will drizzle some of the adobo sauce on it, but she can't take too much heat.
Me and the boys, we gorge it taco and burrito style. Don't get your hands too close to our mouths when we're eating or you might lose a finger. We don't drizzle the sauce on our food, we pour it on......every bite.
