I'm not sure what they call it in your parts...but 'stuffing' is basically a bread casserole. It gets its name because it's breading and spices that are usually jammed into some foul's emptied carcass before it is baked in an oven where the fats and juices drip into the breading during the roast.

...and speaking of mince and Christmas - the English really piss me off. I used to have a drummer with an English wife, and we were at their place one Christmas and she offered around "mince pies" and I said - Yeah!, thinking it was a proper pie with meat in it - but I bit into it and it had fruit in it!!! Thats right - fucking FRUIT!!!! Who puts fruit in a pie and calls it 'mince'? Apparently its some sort of 'traditional English Christmas fare' - well they can jam that up their arses, I'm telling you right now...but I tell you what I wouldn't mind - one of those chickens stuffed with sausages - that'd be alright....
